Day 1 of my High-Fiber {Vegan} Diet


Doctor orders I eat more fiber to help a health issue I've been dealing with. I am super excited to try a natural, medication-free solution to healing my body! 


As a way to keep myself accountable and share easy, yummy recipes with you all, I decided to blog my month-long journey :)  


My journey began at the grocery store earlier today.  I bought about $150 worth of delicious high-fiber fruits (blackberries, raspberries, apricots, oranges, mango, bananas,avocado), veggies (broccoli, zucchini, onion, carrots), a ton of beans (lentils, pinto, black beans), some quinoa, whole wheat pasta, and a bottle of red wine (I don't think there's any fiber in there...).


I snacked on some lentil chips dipped in hummus before dinner time (yum!).  For dinner I decided to go with a simple lentil burger I found online at http://www.food.com/recipe/vegan-lentil-burgers-224363

I tweaked the recipe a bit to fit what I had at home.


First, I boiled 1 cup of rinsed lentils into 2 1/2 cups of salted water for 45 minutes or until the water is mostly absorbed.


Next, I sauteed (1) small onion and (1) medium carrot until soft in a bit of avocado oil.


Then, I used a food processor to combine the lentils, carrot/onion mix, (1)cup of breadcrumbs, a tablespoon of chia seeds, (1)Tablespoon of soy sauce.


My mix was a bit dry so I added a little bit of water, just enough to help the food processor rotate smoother.


Finally, I made the patties that molded perfectly in my hands.  




I cooked three of the patties in the oven at 400 degrees for about 10 minutes on each side.  I was able to save about 6 in the freezer to use during the week!

Once I flipped the patties and both sides were browning, I added some vegan cheese!


I didn't have burger buns so I used whole wheat tortillas, added some vegan mayo and spinach and voila!! A delicious, vegan meal full of fiber!
